To make dosa at home, follow these steps:

Ingredients:

- 1 cup of dosa rice or regular rice

- 1/4 cup of urad dal (split black gram)

- 1 tablespoon of fenugreek seeds

- Salt to taste

- Water as required

- Oil or ghee for cooking


Instructions:


1. Rinse the rice, urad dal, and fenugreek seeds in water separately and soak them in water overnight or for at least 6-8 hours.


2. Drain the water and grind the rice, urad dal, and fenugreek seeds in a wet grinder or blender to make a smooth batter. Add water as required to make a batter of medium consistency. The batter should be neither too thick nor too thin.


3. Transfer the batter to a large bowl and add salt to taste. Mix well.


4. Cover the bowl with a lid and let the batter ferment for at least 8-10 hours or overnight in a warm place. The batter should double in volume and become fluffy.


5. Once the batter is fermented, mix it well and add water if required to adjust the consistency.


6. Heat a non-stick or cast-iron tawa or griddle on medium-high heat. Spread some oil or ghee on the tawa using a cloth or brush.


7. Take a ladle full of batter and pour it in the center of the tawa. Using the back of the ladle, spread the batter in a circular motion to make a thin, even layer.


8. Drizzle some oil or ghee around the edges of the dosa and let it cook for 1-2 minutes or until the edges turn golden brown and the surface is cooked.


9. Using a spatula, fold the dosa in half and serve hot with coconut chutney and sambar.


Repeat the same process to make more dosas. Enjoy your homemade dosas!
